Crockpot Salsa Chicken
Ingredients: Chicken breast, salsa, taco seasoning.
Instructions: Place chicken breast in the crockpot, pour salsa and sprinkle taco seasoning over the chicken. Cook on low for 6-8 hours or high for 3-4 hours. Shred the chicken and use it in tacos, burritos, or over rice.
Slow Cooker Teriyaki Chicken
Ingredients: Chicken breast, teriyaki sauce, soy sauce, honey, garlic, ginger.
Instructions: Place chicken breast in the crockpot, pour teriyaki sauce, soy sauce, honey, garlic, and ginger over the chicken. Cook on low for 6-8 hours or high for 3-4 hours. Serve with rice and steamed vegetables.
Slow Cooker Beef and Broccoli
Ingredients: Lean ground beef, broccoli florets, soy sauce, beef broth, garlic, brown sugar, sesame oil, cornstarch, salt, and pepper.
Instructions: Brown the lean ground beef in a skillet, then transfer it to the crockpot. Add broccoli florets, soy sauce, beef broth, garlic, brown sugar, sesame oil, cornstarch, salt, and pepper. Cook on low for 4-6 hours or high for 2-3 hours. Serve over rice.
Crockpot Taco:
Ingredients: Lean ground beef, diced tomatoes with green chilies, black beans, corn, taco seasoning, onion, garlic, beef broth.
Instructions: Brown the lean ground beef in a skillet, then transfer it to the crockpot. Add diced tomatoes, black beans, corn, taco seasoning, onion, garlic, and beef broth. Cook on low for 6-8 hours or high for 3-4 hours. Serve with cheese one rice.
Crockpot Chicken and Broccoli
Ingredients: Boneless, skinless chicken breasts, broccoli florets, low-sodium chicken broth, garlic, soy sauce (or tamari for a gluten-free option), honey, cornstarch, sesame oil, salt, and pepper.
Instructions: Place the chicken breasts in the crockpot. In a separate bowl, whisk together the chicken broth, garlic, soy sauce, honey, cornstarch, sesame oil, salt, and pepper until well combined. Pour the mixture over the chicken breasts in the crockpot. Add the broccoli florets around the chicken. Cover the crockpot and cook on low for 4-6 hours or on high for 2-3 hours until the chicken is cooked through and the broccoli is tender. Remove the chicken from the crockpot and shred or slice it. Return the chicken to the crockpot and mix it with the cooked broccoli. Serve the chicken and broccoli over steamed brown rice or quinoa for a complete meal.
